I am an Ambassador in the Ragú® Mom’s the Word on Dinner Program and this week we are discussing leftovers!   What busy parent doesn’t love leftovers?  They are quick and easy to prepare when you’re on the run, after a long night out at sports practices, or when you’re too tired to cook a meal.

If we have leftover chicken, sausage, and/or shrimp, we mix them together in a pot of Ragu sauce and serve it over pasta, rice, or barley and wahlah!, we have a Jambalaya!  Here is a great recipe for Jambalaya.  The best thing about this recipe is that you probably have all of the ingredients in your kitchen already!  My favorite Ragu recipe to date has to be the Chicken Fajita Grilled Pizza with Ragu Pasta Sauce that I made in September.  That was delicious but there’s we never have enough pizza left for leftovers.

  1. My absolute favorite thing to make with Thanksgiving is a Hot Brown Sandwich. Take bread, turkey, cheese, and bacon. Put together and then put it in the oven to make crispy. Yummy!! Give it a try! A great Kentucky Derby tradition.

  2. When I make menus, I purposely think about what I can re-use…I frequently do stews on a Thursday night which might use leftover steamed baby carrots, for example.
    Or if I decide on green beans for Saturday, I’ll make a chicken or beef stir fry with them on Sunday.
    No one realizes it’s leftovers at all!

  3. My favorite leftover meal is lasagna. It is always better the next day after the seasonings have melded even more with the cheeses and tomato sauce!! mmmm Now I want it! LOL

  4. With Thanksgiving right around the corner, turkey comes to mind of course! After that, I love leftover chili and can eat it all day long!

  5. A classic Thanksgiving feast provides the best leftovers. Turkey salad, turkey casserole, turkey soup, turkey sandwiches,etc. all served with leftover stuffing, veggies and pie.

  6. My favorite thing for leftovers is lasagna, or sphaghetti
    If it’s lasgna, I cut it up in individual servings and freeze so that we can take a piece out at a time and reheat.
    If it is sphaghetti, I just make lots of sauce and freeze the sauce so that when we are ready for it, we just thaw out a sauce packet and make fresh noodles.

  8. Thanks for a great giveaway! When I make beef roasts with carrots and potatoes, I always make an extra roast just to have for left overs. I throw it in the crock pot to warm it up all day with a bottle of my favorite BBQ sauce, then I serve BBQ roast beef on croissants. They are delicious! 🙂

  9. There are only a few foods that I like as leftovers – lasagna is always better the second day; it’s always cool to take leftover Thanksgiving turkey the next day and make sandwiches with it; I love leftover stuffing, too. That’s about it for the leftovers.

  10. being from the south i love my oysters. when we eat steamed oysters there are always some left. so i’ll pick out the left overs and freeze them. then on a really cold day make an oyster stew out of them. works great for a mid day meal on a cold winters day.

  11. Leftover tip: Any meat can be the base of a casserole. Cube it up, add some noodle and your favorite condensed soup and you are good to go!!

  12. Any time I make a dinner with chicken I always have leftovers to make chicken noodle soup, chicken ceasar salad, chicken salad sandwiches, BBQ chicken spread, and so much more…a little bit of extra chicken can go along way.

  13. This isn’t necessarily my favorite leftover recipe–but, with Thanksgiving coming up, I thought of all the things I like to make with leftover turkey. My favorite is Turkey Divan–delicious! Thanks for the giveaway.

  14. One of my favorite foods for leftovers is sweet and sour green beans — they taste great rewarmed — assuming I can keep everyone from eating them all the first time 🙂

  15. My Favorite leftoveris weight watchers turkey chimichangas. I wrap each one in foil and toss in the freezer and then just microwave for a yummy breakfast!

  16. i LOVE GREEN BEAN CASSEROLE. IT MAKES PLENTY FOR LEFT OVERS & IT TASTES JUST THE SAME MICROWAVED AS WHEN IT CAME OUT THE OVEN!

  17. I think meatloaf always gives some terrific leftovers – I use it to make meatloaf sandwiches, crumble it up and add it to my marinara sauce, put it in a stew, etc., and it tastes great no matter what. Thanks!

  18. After Thanksgiving, we shred the leftover turkey and throw it into a skillet with the leftover potatoes, stuffing, carrots and gravy and make what we call “smorgasbord” – we almost look more forward to the leftovers!

  19. Leftover turkey is great for many thing including turkey sandwiches, turkey tacos, and even “turkey dips” for the kids – use strips of the leftover turkey meat and let the kids dip them in various things (mayo, gravy, ketchup, etc). Fun and easy.

  20. I’ve done all the following and I think the best leftovers are grilled chicken, chicken salad, fajitas, toast with sliced chicken tomato swiss cheese, philly chicken subs, the list goes on and on…

  21. Pot roast is one on my favorite leftovers, There’s a lot of different things you can do with it but one I like best is to toss the chopped up pot roast with cooked noodles, pearl onions, and sour cream. Serve with a tossed salad and crusty bread.

  22. My favorite leftover tip is to use your imaginatio. Like tonight for dinner I had steamed rice and chicken leftovers. So I added a 1 tablsp butter and about the same of oil, this helps the butter not burn. I cut up baby carrots, celery and green onion fried them in the butter mixture. Then added the chicken I shredded from the leftovers and cooked a one longer. Pushed all ingredient to the side cut two eggs and srambled them until cooked and rice, Salt and pepper to taste. A good meal with leftovers, one pan and easy!!!

  23. I find that soup makes for good leftovers. My current favorite is a Baked Potato Soup from Cooking Light. Thanks for the opportunity!

We love to make vegetarian chili in the crock pot and then do an assembly line of toppings–that way our leftovers aren’t all mixed together and we can mix and add at liberty the next day–and the chili is always so much tastier the next day anyway! Also, we’ll make up a huge batch of BBQ chicken for dinner one night and use it in lunches throughout the week. Delicious!

  25. My best leftover tip is if you are planning on having leftovers when you are cooking your meal, don’t make too much. Making enough for 2 additional meals usually works best in our house because by then the food will either start to smell odd or we are sick of it. lol

  26. My favorite leftover tip is using cooked spaghetti. I remoisten with a little water, add 2 or 3 beaten eggs, grated parm cheese salt perrper and pour into a fry pan. Lightly brown on both sides and serve omlette style or as side dishes.

  27. My favorite leftover meal is my homemade portabello spinach pizza! I make my own crust, top it with spinach, and sauteed portabellos with onions. It’s so good even on the next day!

  30. . My favorite leftovers are from a Turkey dinner. I mix the leftover stuffing, corn, and turkey together and bake it. Then top with gravy. I like the left-overs better than the Holiday meal!

  31. My favorite meal to eat leftover is chili. Chili is also a great way to use other leftovers, as you can throw almost anything in it!

  32. A “leftovers Soup” is a good way to clean the fridge–tomato sauce or broth (whatever goes best with the leftovers you have)–then chop leftover veggies, potatoes, add beans. Meatloaf? Chicken? Add it to the soup. A batch of cornbread on the side makes it a new meal.

  33. When I have leftover lasagna, I eat part of the leftovers for lunch or dinner the next day and freeze the rest.

  34. Okay! I love food! I am for sure a foodie from down South of South Louisiana.
    My fave leftover food is gumbo, chili, and lasagna! Simply the best leftover food! YUM!!!!

  35. The best leftovers come from turkey breast roasted (or deep fried!) or rotisserie chicken. We will use the big pieces for sandwiches and then the small pieces for turkey/chicken salad and then the carcass for soup!

  36. Leftover Lasagna is always best! For some reason if your freeze the leftovers they seem to taste better than the first time around. Soups are great too as leftovers!

  37. Whenever we grill steak we slice it to serve and have extra leftover. The following night we just mix the extra sliced steak with a can of peas and top with (cooked) instant mashed potatoes. Preheat oven to 400 and bake for 15 minutes.

    My fav leftover recipe is for rotisserie chicken to take the car kits and boil it with carrots onions celery and make chicken soup I picking a me on the phone discarding the bones and then sometimes I combine rice

  39. Actually, I LOVE left over Lasagna! I swear it tastes better the 2nd day! Toss it in a pan in the oven and heat it…yummmm!!

  40. If we have a lot of leftovers, instead of packaging them up separately in large quantities, I make up separate little meals in individual containers. That way, they’re quick to grab for lunch and an easy, microwaveable, quick meal!

  41. My favorite leftover meal would be homemade tomato soup because then I’ll just add some spaghetti and chicken/seafood and have an quick and easy dinner.

  42. My favorite leftover tip is to eat them for lunch the next day. If you brown bag leftovers to work instead of buying lunch, you can save a TON of money! Thank you for the giveaway 🙂

  43. i love left over spaghetti. I either freeze the sauce and use it for other recipes. with pasta shells and cheese or save it for dipping sauce or another spaghetti night.

  44. My favorite leftover meal is sphagetti. I am not a fan of leftovers-I feel they don’t tase as good the second time around, but sphagetti is always good..first or second time around 🙂

  46. my favorite left over meal is chicken or turkey salad from a big turkey or chicken dinner. I always just combine the left over meat with mayo and it tastes delicious!

  47. My best tip is to cook in bulk. The main thing that I will do is cook chicken breast in the crockpot or a whole chicken in the oven and then my husband will take the leftovers the next day for lunch! I do the same with beef roast in the crock pot because it turns out tender!

  48. When we have left over meats, like chicken or ground beef, I love to make meat pies. I use frozen pie shells, add in some spices, jar of ragu and some mozzarella cheese and put a pie shell ontop and bake…quick and easy and a family favorite.

  49. I love using leftover fajita meat to make super nachos! So easy, just heat up some refried beans, then layer (on individual plates) drops of the hot refried beans over tortilla chips with some shredded cheese, then diced up fajita meat, then a bit more cheese and then microwave long enough to melt the cheese. Then add toppings like salsa and gaucamole. 🙂 creedamy [at] yahoo[dot] com

  50. I LOVE when we have extra bread left over from dinner parties–I dump it into a pan with milk, eggs, cinnamon, sugar, and any fruit I have around the kitchen, and bake. Easiest bread pudding ever!

  51. My favorite leftover meal is tacos. I’ll take whatever leftover chicken, beef, etc., season, and make tacos with all the fillings.

  52. My favorite leftover meal is veggie/chicken rolls. With roasted chicken or turkey meat leftover, add veggies and sauce, it makes a quick and easy meal.

  53. My best tip is to freeze leftovers if you don’t plan on eating them within the next few days. If you do decide to freeze your leftovers, be cautious of certain foods you can and cannot freeze.
